Ingredients
3 organic eggs
1/4 cup chopped onion
1/4 cup chopped tomato
1/4 cup chopped bell pepper
1/4 cup chopped green beans
1/4 cup chopped carrot
1/2 cup fresh spinach
1 teaspoon olive oil
1/4 teaspoon black pepper
Salt to taste
1 tablespoon fresh coriander or parsley, chopped
Instructions
1. Prepare the Vegetables
Wash all the vegetables thoroughly and chop them into small, bite-sized pieces. Crack the eggs into a bowl and whisk them lightly with a pinch of salt and black pepper.
2. Cook the Vegetables
Heat olive oil in a non-stick pan over medium heat. Add the chopped onion and cook for about 1–2 minutes. Add the bell pepper, carrot, and green beans. Cook for another 3–4 minutes until the vegetables become slightly tender.
3. Add Tomato and Spinach
Add the chopped tomato and fresh spinach to the pan. Cook for 1–2 minutes until the spinach wilts and the vegetables are nicely combined.
4. Add the Eggs
Pour the beaten eggs over the vegetables. Let them cook for a few seconds, then gently stir with a spatula. Continue stirring occasionally until the eggs are fully cooked but still soft and fluffy.
5. Serve
Turn off the heat and garnish with fresh coriander or parsley. Serve immediately with whole-grain toast, avocado, or a fresh salad for a complete breakfast.
Health Benefits
Organic eggs are a convenient source of high-quality protein, while fresh vegetables add fiber, vitamins, minerals, and antioxidants to the meal. Combining eggs with colorful vegetables makes this scramble a balanced and filling breakfast option.

Avoid overcooking the eggs to keep them soft and tender.
