Fresh Green Peas & Beans Stir-Fry

Ingredients:
- 1 cup fresh green peas
- 1½ cups fresh green beans, chopped
- 1 small onion, finely sliced
- 1 small tomato, chopped
- 1 teaspoon ginger, minced
- 1 teaspoon cumin seeds
- 1 tablespoon olive oil
- ¼ teaspoon turmeric powder
- ½ teaspoon red chili powder
- ½ teaspoon coriander powder
- Salt to taste
- 1 tablespoon fresh coriander, chopped
- 1 teaspoon lemon juice
How to Make:
- Heat olive oil in a pan and add cumin seeds.
- Once they begin to sizzle, add ginger and sliced onion. Sauté until the onion becomes lightly golden.
- Add chopped green beans and fresh peas. Stir well.
- Add turmeric, red chili powder, coriander powder and salt.
- Cover and cook on medium heat for 7–10 minutes, stirring occasionally, until the vegetables become tender but remain slightly crisp.
- Add chopped tomato and cook for another 2–3 minutes.
- Turn off the heat and add fresh coriander and lemon juice.
- Serve warm as a healthy side dish with roti, brown rice or quinoa
