Ingredients

For the Buddha Bowl

1 cup cooked quinoa
1 cup cooked chickpeas
1 cup fresh spinach or mixed salad greens
1/2 avocado, sliced
1/2 cup cucumber, chopped
1/2 cup cherry tomatoes, halved
1/2 cup shredded carrots
1/4 cup red cabbage, thinly sliced
1/4 cup sweet corn
1 tablespoon pumpkin seeds
1 tablespoon sesame seeds
1 tablespoon olive oil
1/2 teaspoon paprika
Salt to taste
Black pepper to taste

For the Tahini Dressing

2 tablespoons tahini
1 tablespoon fresh lemon juice
1 teaspoon maple syrup
1 small garlic clove, minced
2–3 tablespoons water
A pinch of salt




How to Make Vegan Buddha Bowl

1. Prepare the Quinoa

Rinse the quinoa well and cook it according to the package instructions. Once cooked, let it cool slightly and keep it aside.

2. Prepare the Chickpeas

Drain and rinse the chickpeas if using canned chickpeas.

Heat olive oil in a pan and add the chickpeas. Sprinkle with paprika, salt, and black pepper. Cook for about 5–7 minutes over medium heat until lightly golden.

3. Prepare the Vegetables

Wash the vegetables thoroughly.

Chop the cucumber and tomatoes, shred the carrots, thinly slice the red cabbage, and slice the avocado.

4. Make the Tahini Dressing

Add tahini, lemon juice, maple syrup, minced garlic, and a pinch of salt to a small bowl.

Whisk while gradually adding water until the dressing becomes smooth and creamy.

5. Assemble the Buddha Bowl

Place the spinach or salad greens in a large bowl.

Arrange the quinoa, chickpeas, cucumber, tomatoes, carrots, red cabbage, sweet corn, and avocado over the greens.

Sprinkle pumpkin seeds and sesame seeds on top.

Drizzle with the homemade tahini dressing and serve fresh.
