Ingredients

For the Stir-Fry

  • 200 g firm tofu, cut into cubes
  • 1 cup broccoli florets
  • 1/2 red bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 1 small carrot, thinly sliced
  • 1/2 cup snap peas
  • 1/2 cup mushrooms, sliced
  • 1/2 cup baby corn
  • 2 spring onions, chopped
  • 2 cloves garlic, finely chopped
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon sesame seeds
  • 1 tablespoon cooking oil
  • Salt to taste
  • Black pepper to taste

For the Stir-Fry Sauce

  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon lemon juice
  • 1 teaspoon maple syrup
  • 1 teaspoon grated ginger
  • 1 small garlic clove, minced



How to Make Stir-Fried Vegetables with Tofu

1. Prepare the Tofu

Drain the tofu and gently press it with a clean kitchen towel to remove excess moisture.

Cut it into bite-sized cubes.

Heat a little oil in a large pan or wok. Add the tofu and cook over medium-high heat until the pieces become lightly golden and crispy on the outside.

Remove the tofu and set it aside.

2. Prepare the Vegetables

Heat the remaining oil in the same pan.

Add the garlic and ginger and stir for about 30 seconds.

Add the broccoli, carrot, bell peppers, mushrooms, snap peas, and baby corn.

Stir-fry the vegetables over medium-high heat for about 4–6 minutes. Keep them slightly crisp rather than cooking them until soft.

3. Prepare the Sauce

In a small bowl, combine the soy sauce, sesame oil, lemon juice, maple syrup, ginger, and garlic.

Mix well.

4. Combine Everything

Return the crispy tofu to the pan with the vegetables.

Pour the prepared sauce over everything and toss gently for 1–2 minutes until the tofu and vegetables are evenly coated.

Add the chopped spring onions and sesame seeds.
